This Caldo de Albondigas is very flexible. - 1 egg
- 1/2 cup minced onion
- 1/2 cup raw long-grain white rice rinsed
- 1 tbsp minced garlic
- 1 tsp salt
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp pepper
- 1 lb ground beef 85% lean
For Soup
- 1 tbsp olive oil

- 4 cups beef broth
- 4 cups water
- 28 oz canned whole tomatoes
- 3–4 red potatoes peeled and chopped into large pieces
- 2 carrots peeled and chopped
- 6 small frozen or fresh corn on the cob
For Serving
- Optional toppings: chopped serrano peppers, sliced radishes, lime juice, chopped cilantro

Finely chop an onion. Reserve 1/2 cup for the meatballs and set the remainder aside for the soup.

In a large bowl, beat the egg. Add the minced onion, rinsed rice, garlic, salt, paprika, cumin, oregano, pepper, and ground beef. Gently mix with your fingers until evenly combined, being careful not to overwork the meat.

Form the mixture into roughly 1-inch meatballs. A cookie scoop works well to keep them uniform. Place the formed meatballs on a plate and set aside until ready to add to the soup.

On the Instant Pot, select the “Sauté – High” setting. Add the olive oil and allow it to heat. Sauté the reserved onion until it becomes translucent and begins to brown, about 4–5 minutes.

Stir in the garlic, salt, oregano, and cumin; cook for about one minute until fragrant.

Pour in the beef broth and water, then add the canned whole tomatoes, potatoes, carrots, and corn. Stir gently to combine and distribute the seasonings.

Carefully drop the meatballs one at a time into the simmering liquid, spacing them so they don’t clump together. They will cook through during pressure cooking.

Turn off the Sauté function. Secure and lock the lid. Pressure cook on High for 3 minutes. When the cycle finishes, perform a quick release of the pressure. Open the lid carefully and taste the broth; add more salt if needed.

Serve hot with optional toppings like chopped serrano peppers, sliced radishes, a squeeze of lime, and chopped cilantro. Warm corn tortillas are excellent alongside this soup.
