For fans in the Southeast, the kickoff to SEC play is a highlight of the year—Alabama’s first game on September 26th is just around the corner, and anticipation is building.

Football season brings cooler weather, tailgates, and the unmistakable energy of weekends centered around the game. For me, fall also means the start of the holiday season and everything I love about this time of year. Even here in Alabama, where the first autumn game can still feel hot and humid, the spirit of the season is unmistakable.

While I typically crave hearty soups and slow-simmered stews for chilly football Saturdays, sometimes the weather calls for something lighter and fresher. That’s when this jalapeño-lime chicken becomes my go-to. It’s vibrant, full of bright citrus and a pleasant heat from the jalapeño and chipotle, yet not so heavy that it leaves you feeling weighed down.

This recipe is naturally gluten-free and aligns well with Keto, Paleo, and Whole30 approaches when served without added non-compliant sides. I like to serve the drumettes with a spicy ranch-style dipping sauce and pair them with loaded potato skins for a crowd-pleasing spread. They travel well to tailgates, are easy to prep ahead of time, and can be baked quickly on game day. Bright lime and spicy jalapeño join with a smoky chipotle pepper and garlic to create a lively, easy-to-make chicken drumette recipe. These are ideal for tailgates, game day gatherings, or a quick weeknight dinner that feels festive without a lot of fuss.

Ingredients

  • 2 lbs chicken drumettes (about 16–20 drumettes)
  • 1/2 cup olive oil, light or extra virgin
  • 1 lime, zested and juiced
  • 1 clove garlic, peeled
  • 1 jalapeño, seeds removed and coarsely chopped
  • 1 chipotle pepper in adobo sauce (from a can)
  • 1/2 cup water

Instructions

  1. Make the marinade: In a blender or food processor, combine the olive oil, lime zest and juice, jalapeño, chipotle pepper, and garlic. Pulse until the mixture is smooth and well blended. If needed, add a splash of the water to help the blender along.
  2. Marinate the chicken: Place the drumettes in a large resealable plastic bag or container. Pour the marinade over the chicken, seal the bag, and massage the drumettes so they are evenly coated. Refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
  3. Bake: Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment paper for easier cleanup. Arrange the drumettes in a single layer on the sheet, discarding any excess marinade left in the bag. Bake for 15 minutes, then remove the tray, turn the drumettes, and bake for an additional 15 minutes, or until the chicken is cooked through and nicely browned.
  4. Rest and serve: Transfer the drumettes to a wire rack or platter and let them rest for about 5 minutes to allow the juices to settle. Serve warm with your favorite dipping sauce—spicy ranch, cilantro-lime yogurt, or a simple squeeze of extra lime.
  5. Storage: Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the oven or air fryer to help maintain crispness.
