Have you ever had a craving that you just couldn’t shake? Or made an entire meal out of a single vegetable? This broccolini recipe satisfies both.
Last week I was shopping at a local market known for exceptionally fresh, well-displayed produce. While passing the lettuce, spinach and root vegetables, I spotted a bunch nestled next to vibrant broccoli florets.
Broccolini. I’d never cooked it before, but it practically called my name. I grabbed two bunches and imagined garlic and lemon brightening the tender stems and florets.
Back home, I heated a skillet, sautéed the broccolini, and within minutes I had a simple, satisfying lunch. The flavors were bright and immediate—garlic, lemon and olive oil letting the green note shine. If you’re ready to cook, here’s an easy recipe you can make in under ten minutes.
The Recipe
Simple & Easy Broccolini
Ingredients:
1 bunch broccolini, thicker stems trimmed off
1/2 lemon
1 tsp kosher salt
1 clove garlic, minced
1–2 tbsp olive oil
Instructions:
Wash the broccolini thoroughly. Trim any thick, woody parts from the bottom of the stems and slice larger stalks in half lengthwise so they cook evenly. Set aside.
Heat a frying pan over medium-high heat and add the olive oil. Add the minced garlic and cook, stirring constantly, until it just begins to turn golden—about 45 seconds to 1 minute. Be careful not to burn it.
Add the prepared broccolini and sauté for 2–3 minutes, tossing or stirring frequently, until the stems are bright green and slightly tender but still have a pleasant bite.
Season with the kosher salt, toss to combine, and transfer to a serving plate. Squeeze the juice of half a lemon over the broccolini just before serving to add brightness and balance.
Serve immediately as a side dish or enjoy it as a light main—this preparation highlights broccolini’s natural flavor and takes very little time to prepare.
Absolutely delicious!
