Ingredients

  • 2 cups Rice Krispie cereal
  • ¼ cup honey
  • ¼ cup golden syrup (or corn syrup or additional honey)

Instructions

  1. Coat a 9″x12″ pan with non-stick spray for thin bars, or use a 9″x9″ pan for thicker bars.

  3. In a medium saucepan over medium heat, combine the honey, syrup, and brown sugar. Stir constantly until the sugar dissolves and the mixture is smooth.
  4. Remove the pan from heat and stir in the peanut butter until fully incorporated.
  5. Immediately pour the warm honey-peanut butter mixture over the dry ingredients. Stir thoroughly to coat and combine. The mixture will be stiff.
  6. Fold in the roughly chopped M&M’s and any sprinkles you wish to add, stirring to distribute them evenly.
  7. Transfer the mixture to the prepared pan.
  8. Place a sheet of wax paper or parchment over the pan and press the mixture firmly and evenly into the pan. Proper compression is essential to produce bars rather than loose granola.
  9. Allow the bars to cool and firm for about 30 minutes at room temperature (or about 15 minutes in the refrigerator).
  10. Use a sharp knife to cut into bars. Wrap each bar individually in plastic wrap for transporting or gifting.
