How to make Christmas shortbread

  1. Line a 9×13-inch baking dish with parchment paper and set aside.
  2. In a stand mixer fitted with the paddle attachment, combine the cold butter, powdered sugar and granulated sugar. Mix until fully combined, scraping down the bowl as needed.
  3. Mix in the vanilla extract.
  4. Add the flour in three batches, mixing fully between additions and scraping the sides of the bowl so everything is evenly incorporated.
  5. Press the dough evenly into the prepared pan. Cover with plastic wrap and chill for at least 30 minutes, or up to overnight.
  6. Preheat the oven to 350°F (175°C). Line sheet pans with parchment paper.
  7. Lift the chilled dough from the pan using the parchment and cut into ½-inch squares.
  8. Place the squares on the prepared sheet pans about 1½ inches apart; they will spread slightly.
  9. Bake 12–14 minutes, until the edges very lightly brown. Let the cookies cool completely on the pan.
  10. Melt the dark, milk and white chocolate wafers. Drizzle one-third of the cookies with dark chocolate, one-third with milk chocolate and the remaining third with white chocolate.
  11. Let the chocolate set before serving or packing.
