Preheat your grill to about 400°F and set it for direct heat. Place tomatillos, jalapeños and white onion directly on the hot grates and char them until nicely blistered. Remove and let cool slightly.

Transfer the charred veggies to a blender. Add a batch of cilantro, chicken bouillon (or seasoning), minced garlic, freshly squeezed lime juice and a splash of water if needed. Pulse until the salsa is thick and chunky—aim for a texture suitable for topping tacos, not a smooth chip-dipping salsa.

For these tacos I use a zesty taco seasoning with cumin and lime. Before applying the rub, drizzle freshly squeezed lime juice over the thighs to brighten the flavor and help the seasoning adhere.

Place the seasoned thighs on the grill and cook about 5–7 minutes per side, until the internal temperature reaches roughly 170–175°F. Let the thighs rest for 8–10 minutes after removing from the grill so the juices redistribute and the meat stays tender.

Recipe Tip

Grilling thighs to 175°F helps render the fat and deepen the flavor without drying the meat. Thighs are forgiving, so a slightly higher temperature is fine.

Ingredients 

  • 1 lbs Boneless chicken thighs
  • 2 tbsp All-purpose or taco rub
  • 1 Lime

Salsa Verde Ingredients

  • 2 Tomatillos
  • 1 Jalapeño
  • 1/2 White onion
  • 1 Batch of cilantro
  • 1 Lime
  • 1/2 cup Water (adjust as needed)
  • 1 tbsp Chicken bouillon or seasoning
  • 1 tbsp Minced garlic
  • 1 tbsp Taco seasoning

Instructions 

Salsa Verde Instructions

  • Preheat the grill to 400°F and set for direct heat.
  • Place tomatillos, jalapeño and white onion directly on the grates and char until blistered.
  • Blend the grilled veggies with cilantro, water, chicken bouillon, taco seasoning, minced garlic and lime juice until thick and chunky. Adjust water to reach the desired consistency.
  • Add cilantro last and pulse a few times to keep it fresh.

Grilling Chicken Thigh Instructions

  • Drizzle lime juice over raw chicken thighs and season both sides with taco seasoning.
  • Grill the thighs 5–7 minutes per side until they reach about 170–175°F. Remove and rest for 8–10 minutes.
  • Warm tortillas, cube the chicken, top with salsa, chopped onion and cilantro, and finish with lime.

Notes

Squeeze fresh lime juice over the raw thighs before seasoning to brighten the flavor.
