Make this warm, protein- and iron-packed soup today. It’s economical and very satisfying.

Ingredients

Basic Soup

  • 3 lbs chicken gizzards
  • 2 cups chicken broth
  • Salt and pepper to taste

Optional Additions

  • Fresh parsley or chives for garnish
  • Keto or Carnivore Noodles
  • Additional seasonings or vegetables (celery, onion)

Instructions

  1. Place all ingredients (except noodles, if using) into an Instant Pot, slow cooker, or large soup pot.
  2. Instant Pot: Lock the lid, set the vent to seal, and use the Soup setting or Manual for 40–60 minutes, depending on gizzard size. Allow a 10-minute natural release.
  3. Slow Cooker: Cook on Low for 8–10 hours.
  4. Stovetop: Simmer gently for 2–3 hours, or until the gizzards are very tender.
  5. When gizzards are tender, add noodles if using and heat through.
  6. Garnish with fresh herbs.
  7. Ladle into bowls and enjoy.

Notes

Store leftovers in the refrigerator. The soup may gel as it cools—that’s the collagen setting, a desirable sign. Reheat and thin with extra broth or water if you prefer a looser consistency.
