Ingredients

  • For the vegetables to serve with maple salmon
  • 1 Tablespoon butter
  • 1/2 Tablespoon olive oil
  • 1/2 teaspoon ginger finely chopped
  • 1 medium onion finely chopped
  • 3-4 chanterelle mushrooms optional
  • 4-5 mushrooms any variety, sliced
  • 2-3 carrots roughly diced
  • 3-4 Tablespoon green peas
  • 2-3 spring onions finely chopped
  • ¼ cup sun-dried tomatoes
  • A pinch of lemon zest
  • A dash of water or chicken stock
  • 1/2 tsp cracked black pepper
  • Salt to taste

Instructions

  • Heat butter and olive oil in a frying pan over medium heat. Add the chopped onion, ginger and diced carrots.
  • Sauté until the onions begin to caramelize and the carrots soften slightly.
  • Stir in the mushrooms, green peas, spring onions and sun-dried tomatoes. Add a splash of water or chicken stock, a pinch of lemon zest, cracked black pepper and salt. Cook and toss for 3–4 minutes until everything is heated through and well combined.
  • Serve warm alongside grilled maple salmon.
