Prebiotic Rich Skinny Soup for Weight Loss

Prebiotics are the food that probiotics eat. Probiotics are the beneficial bacteria that live in the gut; supporting them supports digestion, immunity, and can make healthy weight maintenance easier. This soup combines prebiotic-rich vegetables, whole grains, and optional legumes in a flavorful bone-broth base for a satisfying, slimming meal.
Ingredients
- 1 tablespoon Ghee or other cooking fat
- 1 Onion, chopped
- 1 teaspoon Sea salt
- 1/4 teaspoon Black pepper
- 1/8 teaspoon Red pepper flakes (optional)
- 1 cup Barley (pearled), soaked and sprouted if desired (optional)
- 8 cups Chicken bone broth or chicken broth, preferably homemade
- 2 cups Mushrooms, chopped
- 1 bunch Asparagus, chopped with lower woody stalks removed
- 1–2 cups Cooked beans of your choice, soaked and sprouted if desired (optional)
- 1 teaspoon Dried herbs (your choice)
Instructions
- Add the ghee to a large soup pot and sauté the chopped onion until translucent. Stir in the salt, black pepper, and red pepper flakes if using.
- Add the barley and toss with the onions, then pour in the chicken bone broth. Bring to a boil, reduce heat to low, cover, and simmer about 40 minutes until the barley is tender.
- After 40 minutes, remove the lid and add the asparagus stalks and mushrooms. Simmer for one minute, then add the asparagus tips and simmer an additional minute so the tips remain tender.
- Stir in the cooked beans and dried herbs. Heat for another minute until the beans are warmed through.
- Taste and adjust salt and seasoning as needed.
- Ladle the soup into bowls and enjoy warm. This soup keeps well in the refrigerator and can be reheated gently on the stove.

For variations, swap barley for rice or omit grains and increase beans for a protein-forward version. To boost probiotic support, serve alongside fermented vegetables such as sauerkraut or a small side of yogurt if tolerated.
Make this soup in larger batches and freeze portions for quick, healthy meals. Bone broth adds richness and minerals; use a high-quality homemade or store-bought bone broth for best flavor.
