Ingredients
- For the vegetables to serve with maple salmon
- 1 Tablespoon butter
- 1/2 Tablespoon olive oil
- 1/2 teaspoon ginger finely chopped
- 1 medium onion finely chopped
- 3-4 chanterelle mushrooms optional
- 4-5 mushrooms any variety, sliced
- 2-3 carrots roughly diced
- 3-4 Tablespoon green peas
- 2-3 spring onions finely chopped
- ¼ cup sun-dried tomatoes
- A pinch of lemon zest
- A dash of water or chicken stock
- 1/2 tsp cracked black pepper
- Salt to taste
Instructions

Heat butter and olive oil in a frying pan over medium heat. Add the chopped onion, ginger and diced carrots.

Sauté until the onions begin to caramelize and the carrots soften slightly.

Stir in the mushrooms, green peas, spring onions and sun-dried tomatoes. Add a splash of water or chicken stock, a pinch of lemon zest, cracked black pepper and salt. Cook and toss for 3–4 minutes until everything is heated through and well combined.

Serve warm alongside grilled maple salmon.
