Ingredients & Substitutions

Ingredients needed to make sheet pan nachos with ground beef.
  • Ground beef: Cooks quickly and provides great flavor. Swap with shredded Mexican chicken, shredded beef, or other taco fillings if you prefer.
  • Taco seasoning: Use a store-bought packet or an easy homemade taco seasoning blend.
  • Refried beans: Canned refried beans work well, or use homemade refried beans, refried black beans, or whole pinto beans.
  • Cheese: A mix of grated cheddar and Monterey Jack melts nicely and tastes great. Queso or a cheese sauce can also be used.
  • Tortilla chips: Use sturdy, restaurant-style chips for the best crunch, or make your own homemade tortilla chips.

How to make Sheet Pan Nachos

Find the complete recipe card below with measurements and full instructions.

  1. Heat a medium skillet over medium heat. Brown 1 pound of ground beef, breaking it up as it cooks. Drain excess grease, then add taco seasoning and 1/2 cup water. Stir and simmer briefly until combined.

  1. Spread a layer of tortilla chips across a large baking sheet in an even layer.
  2. Spoon refried beans over the chips, then distribute the seasoned beef. Sprinkle shredded cheddar and Monterey Jack evenly. If using fresh jalapeño slices, add them now so they roast; add canned or jarred jalapeños after baking.

  1. Bake at 400°F (200°C) for about 12–15 minutes, until the cheese is fully melted and everything is heated through.
  2. Remove from the oven and top with fresh toppings like guacamole, sour cream, diced tomatoes, shredded lettuce, olives or salsa as desired. Serve immediately.

Tips for the Best Nachos

  • Layer like a pro – Spread chips evenly and add cheese between layers to avoid bare chips on the bottom.
  • Use sturdy chips – Thicker, restaurant-style chips hold up better and stay crunchier.
  • Melt cheese first – Bake the chips with cheese, meat and beans, then add fresh toppings after baking to keep textures bright.
  • Customize to your crowd – Make sections on the sheet pan for different preferences: spicy, mild, meat-forward or veggie-packed.

Topping Ideas

Top your nachos with any combination you like. Popular options include:

  • Veggies: Diced tomatoes, diced onion, roasted corn, or sautéed fajita vegetables.
  • Salsas: Pico de Gallo, roasted corn salsa, mango salsa, salsa verde, or classic restaurant-style salsa.
  • Other toppings: Guacamole, sour cream, shredded lettuce, sliced olives, and extra jalapeños.

Leftovers & Storage

Nachos are best served fresh, but if you have leftovers, store components separately for the best results.

  • Storage: Store leftover toppings like meat, beans, and salsa in airtight containers in the refrigerator for up to 3 days.
  • Reheating: Avoid the microwave to prevent soggy chips. Reheat on a baking sheet in a 350°F oven for 5–10 minutes until cheese is melted and chips regain some crispness.
  • Avoid soggy nachos: Keep wet toppings such as sour cream, guacamole and fresh salsa separate until serving or reheating.
