Who doesn’t enjoy changing up their vegetables? I do — eating the same thing every day can get boring, whether it’s just carrots, cherry tomatoes, or kale.
Varying what you eat matters because different vegetables offer different vitamins and minerals. This weekend I decided my family needed a little variety — not literally or spiritually “rooted,” but nutritionally. I picked up three different root vegetables at the grocery store: sweet potatoes, parsnips, and rutabagas.
My husband tends to prefer familiar, “normal” foods, so my job is to present dishes that look appealing, feel good in the mouth, and taste great. Dressing simple ingredients up with good seasoning and the right texture is a fun challenge. This Root Roast is a flexible, healthy side dish that’s Paleo-friendly and easy to prepare. Roasting brings out the natural sweetness and texture of the roots while rosemary and a touch of olive oil add savory depth.
Ingredients

- 2 sweet potatoes, cubed
- 1 parsnip, cubed
- 1 rutabaga, thinly sliced
- 4 tbsp olive oil
- 5 branches of fresh rosemary
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Preheat the oven to 450°F (230°C).
- Arrange the cubed sweet potatoes, cubed parsnip, and thinly sliced rutabaga on a large baking sheet in a single layer, leaving space between pieces so they roast evenly.
- Drizzle with olive oil and toss with your hands or a spatula to coat the pieces evenly. Season with sea salt and freshly cracked black pepper.
- Scatter the rosemary branches across the pan and roast for 25 minutes.
- Stir or turn the vegetables with a spatula, then return the pan to the oven and roast for another 25 minutes, or until the roots are tender and golden.
- Remove from the oven, let cool slightly, then serve warm.
