Ingredients
- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon dried mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup balsamic vinegar
- 2 tablespoons coarse or grainy mustard
- 2 cups beef broth
- 1 teaspoon fresh thyme
- 1 1/2 pounds gold potatoes, scrubbed clean
- 1 pound carrots, peeled
- 1/2 of a small yellow onion, peeled and sliced
Instructions
- Heat olive oil in a skillet or the sauté function of a multicooker over medium-high heat.
- Rub the roast all over with dried thyme, dried mustard, salt and pepper.
- Sear the roast in the hot skillet, cooking each side about 6–8 minutes until browned.
- Add the balsamic vinegar and grainy mustard to the pan and cook, stirring, until the mixture reduces slightly, about 3–5 minutes.
- Transfer the roast and any pan juices to the slow cooker (or switch your multicooker to slow-cook mode and keep everything in the pot).
- Add the potatoes, carrots and sliced onion around the roast. Pour the beef broth over the top and tuck the fresh thyme in with the vegetables.
- Cover and cook on low for 7–9 hours, until the roast is tender and the vegetables are soft.
Notes
I prepared this in a 4-quart multicooker from start to finish and set it to cook for eight hours on low. If you prefer, you can sear the roast in a separate pan and then transfer it to the slow cooker before adding the vegetables and broth.
Leftovers reheat well and make a hearty sandwich or an easy lunch. For a lighter option, serve smaller portions with a crisp green salad.
