My mom found a one-pound chuck steak on sale, so we decided to try it in the slow cooker. Cutting and slow-cooking it helped ensure the meat turned tender and flavorful.

I trimmed and cubed the chuck steak, then combined it in the slow cooker with cream of mushroom soup, chopped onion, sliced mushrooms and red wine. If you prefer not to use wine, substitute beef stock. A useful tip: freeze leftover wine in ice cube trays to make measuring small amounts quick and easy.

I cooked the mixture on high for three hours, then made a flour-and-water slurry to thicken the gravy and cooked another 45 minutes. Allow the dish to cool slightly before stirring in the sour cream to prevent curdling.

  • Electric slow cooker (crockpot)

Ingredients

  • 1 pound Chuck Steak, trimmed and cut into bite-sized pieces
  • ¼ cup Onion, chopped
  • 21 ounces Cream of Mushroom Soup
  • 4 ounces Mushrooms, sliced
  • ¾ cup Red Wine, or beef stock
  • 1 teaspoon Pepper
  • cup All Purpose Flour
  • ¼ cup Water
  • ½ cup Sour Cream

Instructions

  • Trim excess fat from the steak and cut into bite-sized pieces. Place the beef in the slow cooker.
  • Chop the onion and add it to the slow cooker.
  • Add the cream of mushroom soup, sliced mushrooms, red wine (or beef stock) and pepper. Stir to combine. Cook on high for 3 hours, stirring occasionally.
  • In a small bowl, whisk the flour with water until smooth. Temper the mixture by slowly adding about 3 tablespoons of hot liquid from the slow cooker to the flour paste, repeating three times and mixing well each time to prevent lumps.
  • Pour the tempered flour mixture into the slow cooker, stir thoroughly, and cook for an additional 45 minutes to thicken.
  • Turn off the slow cooker and let the dish rest for 15 minutes. Stir in the sour cream gently.
  • Serve immediately over pasta, rice or mashed potatoes.

Important: For accuracy when measuring dry ingredients, use a scale when possible. If you don’t have one, stir the flour lightly, then spoon and level it into the cup. Too much flour can make the final dish dry or gummy.

Any cut of beef can be used for the tips; tenderloin and sirloin will produce the most tender results, while chuck roast is economical and becomes tender when cooked slowly.
