Ingredients
- 6 ears corn on the cob
- 2 jalapenos, diced (seeds removed if desired)
- 6 slices bacon, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1 pound shrimp, peeled and deveined
- Cajun seasoning, to taste
- 1/2 cup heavy cream
- A few dashes of Tabasco or other hot sauce
Instructions
- Cut the kernels off the corn. Dice the jalapeños, removing seeds and white ribs if you prefer less heat. Cut the bacon into bite-sized pieces.
- Arrange all ingredients on a tray and preheat the griddle to medium heat.
- When the griddle is hot, add the bacon and cook about 3 minutes, flipping a few times. Add corn kernels, jalapeños, and minced garlic to an open area and cook those about 3 minutes, turning occasionally.
- Add the shrimp to an empty section and season with Cajun seasoning. Cook 2–3 minutes, flipping until the shrimp are opaque and cooked through.
- Combine everything, add the heavy cream and a few dashes of Tabasco to taste, and cook another minute or two until warmed through. Serve immediately.
