Method

Preheat your oven to 350°F (180°C). Line a large baking sheet with parchment paper and set aside.

  1. In a large mixing bowl, combine 1.5 cups (195 g) atta (whole wheat flour), 1/4 teaspoon salt, 3 teaspoons ajwain (carom seeds), and 1/4 teaspoon baking powder.
  2. Add 1/4 cup plus 1 tablespoon (45 g) powdered sugar and mix until evenly distributed.
  3. Cut 1/2 cup (1 stick, 113 g) of room-temperature salted butter into small pieces and add to the bowl.
  4. Use your fingers or a fork to rub the butter into the flour mixture until it resembles coarse crumbs. A stand mixer with a paddle attachment may also be used.
  5. Add 1.5–2 tablespoons (22–30 ml) of milk, starting with 1 tablespoon, and add more only as needed to bring the dough together. Mix until a cohesive dough forms.
  6. Cover the dough with cling film and let it rest for 20 minutes to hydrate the flour and make rolling easier.
  7. Lightly dust a clean surface with a little whole wheat flour. Place the rested dough on the surface and roll it out to about 1/4 inch thickness. Roll slowly and apply even pressure to avoid cracks.
  8. Use a 2-inch round cookie cutter (or knife) to cut shapes. Transfer the cut cookies to the prepared baking sheet. Gather the remaining dough, reroll, and cut more; you should get roughly 18–20 cookies.
  9. Optionally sprinkle a few extra ajwain seeds on top of each cookie and lightly brush with milk for a slight sheen. Prick cookies with a fork to prevent puffing, if desired.
  10. Bake at 350°F (180°C) for 18–20 minutes, until the cookies are crisp and lightly golden around the edges. Allow to cool to room temperature on a wire rack before storing in an airtight container.
