This dish was inspired by a trip to Louisiana where I fell in love with Cajun seasoning. Between gumbo, jambalaya, and crawfish étouffée, I decided to try creating a quick, home-cooked meal using those classic flavors.

We planned to grill thin chicken breasts, but when a storm rolled in we switched to the stovetop. The result was a juicy, pan-seared chicken breast coated in Cajun seasoning and finished with a buttery garlic sauce.

Cajun Butter Chicken Breast Recipe
This recipe is straightforward and quick. The most important tip is to use thin chicken breasts so they cook evenly and rapidly. If you only have thick breasts, slice them horizontally to create thinner cutlets.

Choose your favorite Cajun seasoning and place the chicken in a resealable bag with the seasoning and a little oil. Shake and rub the seasoning to coat each breast evenly.
Heat a large skillet with olive oil and butter until the butter melts. Carefully add the seasoned chicken and sear for about 5 minutes per side, or until cooked through. Remove the chicken and let it rest briefly while you make the sauce.

With the chicken resting, make the Cajun butter sauce in the same skillet. Reduce the heat to medium and add butter and garlic, cooking briefly to release the garlic aroma and scrape up any browned bits from the pan. Stir in chicken broth and let the sauce simmer for 2–3 minutes until it reduces slightly.

Return the chicken to the skillet and turn it to coat both sides in the sauce. Serve the breasts on a platter and spoon the remaining Cajun butter sauce over the top for a glossy, flavorful finish.

To make the sauce: melt butter in the skillet, sauté minced garlic briefly, then add low-sodium chicken broth. Let the liquid reduce for a couple of minutes, stirring to incorporate the browned bits. This creates a silky, savory sauce that complements the spiced chicken.
When ready to serve, plate the chicken and drizzle it with the pan sauce. The contrast of the spicy crust and the buttery garlic sauce makes for a satisfying meal that pairs well with simple sides.

Ingredients
- 4 thin chicken breasts
- 1 1/2 tablespoons olive oil, divided
- 3 teaspoons Cajun seasoning, low sodium
- 1/4 cup unsalted butter
- 4 cloves garlic, finely diced
- 1/2 cup low sodium chicken broth
Instructions
- In a large resealable plastic bag, add the chicken breasts, Cajun seasoning, and 1/2 tablespoon olive oil. Seal and toss to coat evenly.
- Heat the remaining oil and 1 tablespoon butter in a large skillet over medium-high heat.
- When the oil is hot and the butter is melted, sear the chicken 5–7 minutes per side, or until cooked through. Remove and let rest.
- Reduce heat to medium and melt the remaining butter in the pan.
- Add the garlic and sauté for about 30 seconds, scraping up any browned bits.
- Pour in the chicken broth and let the sauce reduce for 2–3 minutes, stirring occasionally.
- Return the chicken to the skillet and toss in the sauce to coat.
- Serve warm on a platter and drizzle with the pan sauce.
